Ingredients
225 g soft salted butter
220 g granulated sugar
220 g brown sugar
5 tsp vanilla extract
2 medium eggs
415 g flour
3 g baking powder
2 g salt

Method
Mix the butter and sugar
In a different bowl, beat the softened butter until fluffy and creamy. Add the granulated sugar and brown sugar, and mix until well combined.




Add the eggs
Incorporate the eggs and vanilla extract, mixing well until fully combined.


Combine the dry ingredients
In a bowl, mix the flour, baking powder, and salt, then set aside.
Combine the dry and wet ingredients
Add the dry ingredients to the mixture in three parts, mixing gently each time. Avoid overmixing to prevent too much gluten development.



Prepare for baking
Preheat your oven to 180°C (350°F) and line a baking tray with baking paper (parchment paper).
Shape the dough
Roll the dough into balls of about 30 g each and place them on the tray, leaving space between each one.


Bake
Bake for 8–12 minutes, until the edges just begin to turn golden brown while the center remains soft.
Let the cookies rest on the tray for 5 minutes, then transfer them to a cooling rack to cool completely.

Tips
Avoid overcooking if you like the cookies soft and chewy.
If the dough feels too soft, chill it for 15–20 minutes.
Bake one tray at a time for more even results.
